Holiday Bite-Sized Treats: How to Use Christmas Leftovers into New Year’s Eve Appetizers
What kinds of canapes can I whip up for New Year’s Eve using my Christmas leftovers that will still impress guests?
Party snacks needn't be elaborate, so New Year's offers a great chance to use up what's left. The key rule is to keep things to just one bite—guests don't want to handle a fork. People just want a comforting taste of hearty fare with a decadent twist.
Should you possess a bit of cured fish left, layer it on mini pancakes and crown it with lumpfish caviar. Small patties are also an ideal choice: Whether you've got leftover smoked haddock or flaked salmon, mix it through mashed potato, combine with dill, lemon, and caramelized onions, then coat in Japanese breadcrumbs and fry until golden.
You could also have a ball with croquetas. Make the bechamel up to days ahead, then use remaining pork, poultry, or mushrooms for the filling. Blitz old bread into crumbs to cover them, then cook until crisp. Sausage roll fillings are another perfect use for those breadcrumbs, or use them as a jacket for chicken pieces. Seasoning-wise, just add a bit of citrus zest and thyme, and they'll sing so much more. Incidentally, buttery pastries make excellent coatings, too.
One favourite thing at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Get some ham and turkey in an airtight container and freeze. While you're at it, set aside some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then pop it in a preheated oven with the reserved glaze for a brief period. Let it cool and slice thinly, then arrange on top of some artisan bread and assemble sandwiches with lots of cranberry sauce. Slice into small squares for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. There’s always a bit of turkey leg left over, and it's ideal for something punchy. Pull the meat, then fry it slowly in a pan, and toss with leftover cranberry sauce loosened with lime juice, a spoonful of soy and a little chilli oil. Finish with chopped herbs and some sliced spring onion, and present in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Combine all your leftover veg with herbs, then add salt and pepper and add flour. Stamp out portions to about the size of small rounds, then store in the freezer. Refresh in a preheated oven for a few minutes and top with whatever you like—perhaps sliced beef and sharp horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
