WHere is an easy version of a cocktail featured on a new drinks list. This is a batch pre-mixed that's packed with tastes of the Christmas time, which makes it ideal for a celebration. Save the extra syrup for brunch beverages, puddings, or to make another batch of bikinis.
Bikini
Makes enough for 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Put every ingredients inside a pot, bring to a light boil, stirring to dissolve. Next, remove from the heat allowing it to cool down fully. Pour into a sealable bottle, close it and refrigerate it chilled, it will last for around four weeks.
For the Batch Mix: Combine every spirits and syrup in a big jug, allow it to infuse for one hour, then pass it through preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Pour 85ml from the cocktail base to a mixing glass filled with ice, and agitate carefully for a minute to chill. Pour to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it with a brief mist of mandarin oil over the drink.
